    This is a eminent piece of equipment for many cooking tasks; don't let the "stir-fry" moniker limit your uses of it. In actually, because of its large flat bottom, it doesn't quite work as well for stir-frying as a traditionally shaped wok, and the nonstick coating, while wear-resistant, means you have to be a little bit too careful when moving food around -- a true stir-fry should be stirred with recklessness. But this large pan is good for all kinds of sauteeing, and because of the high sides its capacity is tremendous. Multiparty with the tight-fitting glass lid, one of the best uses of this pan is to make risotto for a huge pile; it's also really nice for tossing almost-cooked pasta into a hot sauce.A few minor notes: be knowledgeable that the pan is really very large, and quite heavy, and because of this it takes a long while to heat up. It can be hard to rise when full of food. You probably wouldn't want to use this for a side dish, to whip up a little sauce on the side, or to pastry-cook for...

    If you dig cooking, you know how useful it is to have quality cookware. Cheap cookware doesn't last, nor does it appear as well (uneven heating, insulated grips that get very hot, poor grip design, non-stick covering that degrades, poor lid seal, etc). You can spend $15 on a pan that may *look* nice and seem like a settlement, but then you find in a year or two you're wishing you had a better one.The best thing is to go all out, invest a nice chunk of well-heeled, and get a major cookware set by Calphalon, All-Clad, Paderno, Le Creuset, etc. But if you're budget conscious, this is a difficult reaction to do. If you're like me, you buy your cookware one pot at a time, when you find a good quality one on sale.I bought this Anolon pan at Macys when they had a one-day sales event (got it a little cheaper than here, in store).     Valid the facts, ma'am
    It well-founded arrived so I have no comments on its utility or durability. But before I forget, I want to post the actual dimensions. That would have helped me a LOT if anyone - including the fabricator - had bothered to do so. This is a 12" pan measured across the top. It is a 6.25" pan measured across the flat bottom. The sides curve up from there, to a elevation of 3.25". The handle is 7.5" long, with 4.5" of that insulated.

    Shouldn't have had to pay for this.
    I bought my new Le Creuset Dutch Oven (ok, they call it a "French" oven, but whatever) a link months ago for two reasons: I needed a Dutch oven anyway, and I knew that cast iron would be the unsurpassed way to go. Plus, I was eager to try out a new simple bread recipe that everyone was talking about in the New York Times: The Bittman no-manipulation bread. It called for the loaf to be baked in a cast-iron Dutch oven at a very elevated temperature (450 degrees).So I plunked down the $230 (a seemingly insane amount of money for a pot, but I figured I was buying attribute, and that it would last a lifetime), and when it arrived I started the bread recipe.But wait. The instruction manual -- while saying that the pot is warmth-rated for temperatures in excess of 500 degrees -- stated the maximum temperature for the pot's black phenolic lid projection was only 375 degrees. (I later found out that "phenolic" is just a classy name for PLASTIC.) So -- how were all these population baking...

    I've been looking for a replacement protuberance for my Lodge 6 quart blue enamel covered dutch oven. I wanted to be superior to use the pan in the oven to make the famous bread recipe, but the knob that came with my Lodge pan isn't oven whole. I was having no luck, till I accidentally came across this stainless steel Le Creuset 2 inch replacement projection. It was cheap enough, so I decided to take a chance. It FITS, and it fits PERFECTLY....right take the measure of knob, right size screw, and right size screw length. If you've been looking for a replacement protrusion for your Lodge cast iron enameled pot, then GO FOR IT!!! I am one very happy home cook.
    Enormousness Matters
    Give over it to the French to have too long a screw. The screws for the original knob and the replacement stainless insulate knob were identical so I had to make a trip to the hardware store. I picked up 10 shorter screws that worked very. The knob is handsome and functional for the 7 1/4 Qt. Lid.Le Creuset should hire 'Madge" for quality leadership as the screw included in the package was at least 1/4" too long. And no one likes floppy knobs.3 Stars for the carelessness and wasted gas. A shorter screw would have pushed it to a 5.
