It is gently curved from tip to heel allowing you to use a moderate rocking motion as you cut.Customer Reviews8" chef works wellSince I was planning to pass a few days in a commercial kitchen, and my 6" Henckels knives are both embarrassingly small for serious work and embarrassingly deaden because I'm too lame to sharpen them, I decided to grab the 8" chef's knife (at Bed, Bath & Beyond, with a 20% off coupon.)It worked bloody well for all the tasks I set it to today, including mincing parsley and chiffonading mint as well as the usual caustic tasks. Despite its shallow curve (I strongly prefer knives whose edges are mostly straight, rather than the hooked French style) the blade rocked very well for mincing, and was flat enough to cut completely through the rolled king's ransom leaves in one short stroke. Furthermore, the sharpness impressed the other people who used it, though we shall have to see if it can be REsharpened to the same step by step.The handle design is clearly not for everyone, but I found it very comfortable when I held the knife as many cooks do, with the back end of the blade... I Enjoyment This Knife! I am not a proficient chef but am a foodie who loves to cook. My wife noticed the way I ogle the fine knives when we are out shopping and so solid to surprise me with this knife for Christmas. I have used it several times in the last few days and my initial impression is "what a giant knife"!Specifically, here is what I like about it:1. The edge - expertly sharpened right out of the encase. It cuts cleanly and easily. The core in made of VG-1 steel. VG-1 is high carbon steel which should take a very rigorous edge when resharpening is needed.2. The Damascus style stainless steel layers provides a rank of rust and stain protection and has great eye appeal.3. The handles integrate with the shoot without the use of rivets or other fasteners. I have fairly large hands and the shape of the handles are very comfortable for me.4. The fissure shaped bolster, integral to the blade, is fantastic for people like me who mainly use a nick grip on the... exceptional, beautiful, durable - winner all around i've had my 8" katana for about 4 years now, and i'm merely as much in love with it as the day i bought it. like others have mentioned, it's amazingly sharp right out of the package, and i can prove that a few swipes with a steel bring it right back up to speed years later. beyond keeping it out of the dishwasher and only using wood harsh boards, i certainly don't baby my knives - i generally forget to wash it and put it up right away, things dry on it, etc. still, it cleans up and sharpens up with no pretty pickle. the unique handle shape (wider at the butt, narrower at the bolster) means it's smug for either a standard handle-grip or for the "chefs grip" where the knife is pinched between the thumb and forefinger straight off at the back of the blade in front of the bolster. unfortunately, this handle shape also means it might not fit quite right in a guideline knife block (it does in mine, but it doesn't in a friend's).my best advice: go to the store and pick one up in... | |

I'm the kind of guy that really only uses a couple knifes in the kitchen. I find that the Santoku satisfies scarcely about every need, so I felt buying a set of 15 knives would be a waste of money, as I would only use a couple of them. With that in mind I went to go buy this Calphalon santoku.First I realized that this pierce was too small for me (but this isn't taken into account in this review, that was my own fault). I then proceeded to make a few cuts with this cut to test it out. I grabbed a grapefruit and decided to see how small I could slice it up. The first couple of cuts were attractive, but I quickly realized that it started to dull out on my as I got towards the end of the grapefruit. I used my sharpening steel to re-gather together the blade... Talented for beginner or experienced cook I wanted to get a santoku, but I am a little of an amateur in the kitchen. My boyfriend (an expert cook) has the 7 and 8 inch santoku from Henkels in his pierce set, which I thought were way too big for me. I am really happy with this 5 inch. You can cut everything from vegetables to meat with it. He thought the knife would be too nugatory for him, but he loves to use it when he comes over to cook. Its crazy sharp and the slightly rounded edge rocks it extremely nice over vegetables and pretty much everything else. I love this knife! Not in the same guild as Wusthof I have a Wusthof 7" Santoku and turtle-dove it so I thought I'd save a few bucks and get a 5" Calphalon. What a mistake! It can't be made to be as sharp as the Wusthof and it rusts! I interesting you save up your pennies and get a good Wusthof instead of this mediocre knife. |
