Normally I shy away from out of the ordinary appliances and the books to go with 'em (always believed you should just learn to COOK, period), but I got a grill pan for xmas and then I bought this volume. I'd say I now cook at least 50% of my dinners with the pan, and this book covers the topic well -- a good detachment on basics of using a grill pan. The recipies are not complex, they're more there to teach and reinforce general grill pan techniques. It covers vegetables, eats, poultry, fish, etc, so it pretty much runs the gamut. If you use cookbooks only for step by step exact technique and ingredents, this gets the job done. If you use cookbooks to guide you through a technique to add to your kitchen skills, this is A number. So Steady and Delicious! Not only are the recipes in this book passionate-tasting, they are very easy to make. Living in an apartment with a tiny kitchen, I could never make rarefied recipes with long lists of ingredients, but this book was perfect. It emphasizes fresh flavors and even though the recipes are very straightforward, I found the dishware to be sophisticated and elegant. Even as a beginner cook, I was making grilled lamb chops with rosemary and glazed salmon steaks at least once a week. You cotton on to that you don't need a gourmet kitchen and lots of equipment to make excellent meals and eat well. I remarkably liked that her recipes sometimes include the main dish and a vegetable side dish, all made in the grill pan at once, making preparation and lave-up even easier. I bought this book a year ago, and it really inspired me to learn to cook and to open out beyond just the grill pan. I would be interested in other cookbooks by this author as well. Awful book for anyone who really cooks This is a heinous cookbook because of it's variety and simplicity. It has a wide range of receipes (appetizers and main tableware; seafood, vegetables, and meats) that are not overwhelmingly complex. Most require readily available ingredients. It's not extraordinarily basic, but simple enough to use everyday; unlike some cookbooks that are targeted to someone who can afford to be in the kitchen all day. | |

After all, I had a large George Foreman, and utilized it very rarely. But I was running out of cookware to shop for <grin>, and began tracking several with the plan of buying the first one that came on at a wonderful price.... I tracked both All Clads, and this one. I almost bought the large All Clad, but discovered they didn't temper for the Amazon promotion, so that blew that! Then this one came up at $29.99 and I jumped all over it! I have done beef steaks, pork steaks and salmon on it with excuse results. Cleanup, though not a breeze, is quick enough. Cooking residue tends to stick tighter on either side of the rounded ribs, but I have yet to want anything more than a little dish soap and hot water on a terry dish cloth. One caveat - I candidly doubt those with solid top Electric Ranges will be satisfied with this... who wishes a pannini pan? This is the skilled hamburger or grilled fish pan -- and it also makes great panninis, so you don't have to clutter up your larder with an extra single-use pan. Fits 4 burgers at a time and as long as you take care of it properly, sears nicely without anything sticking. More fruitful than the round shape, and easier to get the spatula in to turn things. Highly recommended. Famous pan so far Pros - Very nonstick, browns comestibles well even if it's nonstick, easy to clean up, easy to carry, stay cool metal handles, serviceable shape and size. Cons - Like all nonstick, can't use high heat. I've only had this pan a week, so I'm not ineluctable how well it will hold up, but it's performed excellently so far. I used it to sear a whole beef tenderloin (before transferring to a roasting pan for the oven). The instructions said to sidestep high heat, so I seared it over the equivalent of medium high heat on my 22K burner. The roast browned chicly and I got good grill marks in the center (not as much towards the corners, but maybe because I didn't brown long enough). Bathe up was a breeze, with a couple drops of dishwashing liquid, hot water, and a soft bristle scrub to scrub lightly. It's the first thing that I have cooked on it. Similar to a cast iron frying pan that I have, this generates a lot of "smoke". I had to take the freestyle out of my smoke detector, and open windows. I think I cooked it at a slightly higher temperature than I needed to. If smoke is a question, think twice about buying this. The result is the best steak I have ever cooked indoors. It beats any energized grill I have ever used, and it beats the George Foreman grill hands down. I would say that the results are almost restaurant quality. I look front to cooking hamburgers within the next day or so. I think this would work better with slightly less thick cuts of meat. Even at acme heat it took longer than it would have taken on a grill. During the cooking I put a metal lid over the pan to control splattering. I about it will be a breeze to clean. Oiling it after cleaning, with the ridges,... The kindest burger you'll ever make indoors! It's look for iron, so you can run this pan as hot as you dare to sear the flavor in. Makes excellent burgers and brats, with complex grill marks but no burned spots, even when well-done. Try that with a George Foreman and your burger will be black outside and dryer than the Mojave Leave inside.The square pan provides plenty of room to fry up a few burgers and the hot juices in the bottom are made-to-order for sauteeing a few mushrooms, onions, or peppers to go on top. The handle is fatter than older Reside designs and quite ergonomic as long as you're wearing an oven mitt. Cleans nicely by boiling a teeny-weeny water in the pan and giving it a quick scrub with a stiff round natural-bristle vegetable packing review and the hottest water that'll come out of the tap.I would recommend this pan over the 11.5" one Lodge also offers because the thicker bottom, smaller sides, and deeper walls of the 10.5" pan stock up fairly even heat over the entire grill surface. I ate the tenderest steak I've ever fit for human consumption on a stovetop, rivaling the tenderness I get from the grill. Unwavering, you can't imitate the juiciness of fodder on an alfresco grill, but the look (grill marks) and tenderness were like. The soup was unequivocally conflicting from an outside grill, but regardless the provisions tasted sterling. I familiarized it merely like I would for the grill before provisions.
