NOT aluminum essence on sides
After stocking up on Calphalon cookware through Amazon, I almost purchased this detail after reading the official Amazon review. Fortunately, I examined one while browsing a local stow away, and saw that only the bottom was aluminum core, not the sides, and the bottom was impact-bonded with a seam. Examine the Amazon come-up picture and you also can easily see the seam at the bottom. The box I looked at clearly stated this as well. The multi-pot that I examined was certainly Calphalon Contemporary Stainless, not the less expensive Simply Calphalon series. This is not the 8-quart stockpot, which is much more expensive, and does not take with any inserts. I am purchasing the Calphalon Tri-Ply Stainless 8-quart stockpot instead, and finding an after-market stainless fortify steamer insert. The inserts for this pan and the Simply Calphalon Stainless 8-quart multi-pot do not fit the Tri-Ply. First-rate and the Perfect Size, But Don't Forget the Barkeeper's Friend !!!
With a budget of only $100, I was torn between getting a 12-qt. Cuisinart or this 8-qt. Calphalon. I first went with the Cuisinart but returned it because the strainer had Stygian metal residues within the holes, and felt flimsy. I tried to wash the residues out but didn't penury the chance of it coming back during cooking. My purchase of the Calphalon Contemporary was immediately met with amazement because of its beauty. It looks and feels so much sturdier than the Cuisinart, and the 8-qt. panic my cooking needs. We only cook a 1-pound package of spaghetti each time, so this is the perfect assay. The 12-qt. could have easily cooked 2 packages at a time, but how many times are we going to cook for a fete of 10? Hardly. By the way, the spaghetti package directs us to use 4 qts of water per package. Lastly, I feel that everyone who owns stainless steel ccokware needs to always have some BARKEEPER'S FRIEND cleanser and polisher in their current...
Warmth the Pot, Not the Pasta Insert
I have had this pot for about a year and use it every day. It seems to stress evenly so I am not worried that only the bottom has an aluminum core. I love the styling and don't mind that the handles sometimes get hot. I by the skin of one's teeth use oven mits. I also don't mind that the lid fits tightly without a vent, and therefore you cannot fill the pot all the way full if you are boiling water. I just don't fill it all the way and have never had a muddle with it boiling over. The steamer basket is quite useful for steaming fruits and vegetables, but I sanctuary't used the pasta insert much. The problem is that the insert is not long enough. If it were longer and nearly hit the bottom of the pan you wouldn't have to fill the pot so full when you pastry-cook pasta. Less water means less time to boil. Having to fill that pot so full to cook a little pasta is a become debilitated of time so I usually just use a different pot. The pasta insert is collecting dust.

The trounce all around pot
Ahh, what a delight to use this pot. Easy to cook with, great for sauce reductions, works great for ethnic foods, mild to stir, easy to carry, great size on the stove top,easy to clean, feels much lighter than the historic all hard anodized pots .....and so attractive. If I were to own only one pot, this contempo. 5 qt. quart pot would be it! This is Calphalon at their most suitable.Hopefully they will come out with a 10-16 quart. version of this pot.

Very precise pot, but handles do get hot!
This is a very exacting pot. However, please be informed that the handles on this pot do get hot, as does the lid handle. I have the Calphalon Contemporary 2.5 qt. shallow saucepan with the extended handle, and I have not noticed this problem with the longer handle.

This child's a tank! All the bachelor ever needs!
I have had this for some on one occasion, and it is a tank. The reviewer below was right when he said that if you only own one pot, make this it. Sauces, stews, chili, jambalaya, roux-based plates. This can handle it. I've used it to boil pasta, in a pinch. It is also great in the oven. It is a champ at braising. At 200 degrees in the oven, sealed, it does the toil of a crock-pot -- maybe better, because the oven heat carmelizes the food. I am so glad I own one!

Gifted Price for a Great Pan! You really can use this everyday for everything!
Let me start off by saying that my prime cookware set is the Anolon Titanium set that cost $399 when we got it in 2003. I love these pans because they are dejected-duty, nonstick because of the titanium, and dishwasher safe because of the titanium. Well, I wanted to add an "everyday" sort of pan to my gathering because the Anolon set is VERY heavy and takes up lots of space, so I wanted something a little ligher superiority for easier handling, but still large enough to cook for larger dinner parties AND easy to straight. So we looked at 12" pans and skillets and we decided on this one, the Cuisinart Chef's Classic Non-Melt Hard Anodized 12-Inch Everyday Pan with Cover. For what you get in this set...the 12" pan and the covered lid...you cannot wear the price for the quality. For one, it uses a "quantanium" coating for its nonstick base...this is basically a nonstick coating reinforced with titanium, so it can stand up to higher temps (oven safe to 500 degrees) and is scratch...

Many 'pros' but a three 'cons'...
I would say the pan is a only slightly lighter than the Calaphon 'Commercial' everyday pan (with no non-stick surface). However, remarkably, the 'Chef's Master-work' claims to be oven safe up to 500 degrees while the Calphalon maxes out at 450 degrees. (Amazon's in-auditorium brand, the Pinzon, only promises a paltry 350 degrees.) The glass lid could only charitably be described as 'milieu dome' and is not as high as its stainless steel counterpart. To reviewers concerned about cleaning...no anodized aluminum pan should ever be placed in the dishwasher. If the alien of the pan becomes spattered with cooked on food, I would say the use of a paste of baking soda or 'Barkeeper's Friend' might hands. It does help that the pan will fit flat in a standard sink for easy cleanup with mild dish detergent and keen water. One key is to dry the pan immediately after washing. With its titanium-reinforced, non-stick surface, metal utensils may be reach-me-down; however, since...

Having the suitable pan for the job
Talk about potato woes. Mine were sticking to the pan, spine-tingling, smooshing against my spatula. I tried home fries on the stovetop, roasted potatoes in the oven. Nothing worked and I was getting so frustrated. I got this pan yesterday and had to use it to be honest away, for supper. I cut red new potatoes in half and tossed them with olive oil, herbs, salt and dot. I poured the potatoes into the pan and put them into the oven at 380 F. After 30 minutes I went to turn them and when I pulled the pan out, the potatoes SLID around the pan. So superb to see. After another 30 minutes, they were done- brown, crisp along the edges, perfectly cooked. I guess it's all about having the preferred pan for what you're doing. This pan turned my terrible potatoes into perfection.

I would barely go with what you have and not worry. But to give you an idea of what the braising technique really is, here you go.
Typically, it's a fairly shelf pot with a good lid to keep in the heat, and the lid actually has tiny points
