When they arrived, I noted that they were a bit lighter than the commercial quality cookie sheets that I had used beforehand, but my thinking was that if they baked well, that was all that counted. I always bake with an Exopat silicone mat on my sheets. Upon the first use, when they were placed in the oven, the edges of the cookie sheets turned up about a region of an inch - an ominous sign that the sheets are too thin. The next thing I heard was the tap tap tap of sheets buckling in the oven. Lack of dimensional steadfastness at 350 degrees F translates to poor heat conduction, and burned cookie bottoms. This symphony of metal buckling, ceremony of my new $15 cookie sheets. Even with the Exopat silicone sheets on them, the cookies were barely done when I decided to pull them from the oven to protect the bottoms from getting burned - typical of cheap, thin... Vast Cookie Sheets I bought these as a replacement for a set , from another mark , that were awful , they did all the bad things that a prior reviewer spoke of buckling etc. Prior to this , I had owned a mavin collectors version of this set . After 5 years of heavy use and some abuse , it was time to replace them . I couldn't find the same set, they don't toady up to them any more . I went with the lesser brand and was very disappointed. This set works great , I made a batch of cookies tonight , they ripe evenly , the sheet was stable and clean up was a snap. My only bug-a-boo with this set is is has Calphalon in big raised letters on the cooking side of the stratum , right smack in the middle ... I don't like the thought of one of my cookies being labeled lol so I tolerant of one of my silicone baking mats on top of it. Grievous-duty cookie sheets I'm surprised to presume from the previous review, because I just had that experience with a different cookie sheet, one that got great reviews from most residents. I've owned my Calphalon sheets for a few years now, and they are solid, heavy-duty sheets that have never warped in my oven (and I bake scones every week at 425o in a convection oven). I like that the 17" stretch makes them big enough to hold a 15"-wide sheet of parchment paper without having to go bankrupt or trim it. The two unrimmed edges make it easy to prepare items on a sheet of parchment and then valid slide the sheet underneath it. The one thing I don't like is that the nonstick coating is pretty unreliable... if you turn your pans end-to-end midway through a bake, you have to be careful to keep the parchment and baked goods from slipping off the pan. I'm still disorderly as to why my experience is so different from Brian's... but the Calphalon sheets get two thumbs up from me. | |

I like having sides on my sheets, and these fit the bill (some sites/companies will determine you that you can't bake cookies properly with sided pans, but I've never had any problems). I had several criteria for this purchase: penalty, quality, weight (I wanted heavy gauge), and non-warping. These sheets matched my requirements on all counts EXCEPT for the warping...they still give the dreaded 'boing' when in the oven a two of minutes. Granted, it doesn't seem as bad as cheapie sheets, but still....oh well....love the sheets anyway and would buy them again. Cyclopean quality, weird tag These pans are marvellous in most ways- very heavy, well made, big. My only complaint is that there is a raised Calphalon brand stamped into the middle of each pan. If you put a cookie or something on that comedones, you'd end up with "Calphalon" stamped into your cookie! Wow! I already have two of these pans, also gave one to my daughter. I am now ordering a set to give my mom--I can put 15 cookies on a rag and it takes no time at all with two of these pans to bake a batch of cookies. I bought this set for my daughter for Xmas and oddly she bought the painstaking same set for me for Xmas. To begin with I was in love with this set. But I am keeping a close eye on it. It seems that the more I use the pans, items are beginning to cane to the bottoms. I have never put these in the dishwasher....always washed by hand and dried immediately. I have also never used any exemplar of cooking spray on them as I find this tends to ruin pans and make them impossible to clean. I am hoping this doesn't become a puzzle in the future, as I really do like the set. It seems well constructed and well worth the money. My pans are calphalon also and I wouldn't line of work them for anything. Cake pans are small ones and so are the bread pans...not full size. Calphalon Bakeware Set I don't have much fortune with non stick products as the non stick finish never seems to last. I purchased several sets because the price was cheap enough that I assume that I would just throw them away after the finish wears off. It came in just in time for all the time off baking and so far it's been working great but then again it's only been a month! The bakeware is a little lighter than I expected. I liked them. I got all the shapes I needed for a low expense. The 8" round cake pans almost look like pie plates so they're a bit smaller than I expected but I didn't needfulness any bigger. The loaf bread is 9" by 5", which I hope helps because I was wondering about the volume before buying and I couldn't find the details anywhere. I'm happy with my purchase, they all work great and after baking my breads and muffins even-handed come right out of the pan so the nonstick works great. I wash them by hand and getting any comestibles residue from them is very easy too. They look sturdy, not like other cheap products that seem sheet thin. These are excess for regular home baking. |
