I find they are a bit like evict iron. Once they heat up (on medium), they retain their heat and cook evenly. I use medium quicken, and can often get by with med-low. No warping or flaking yet. (The key is to not use any more heat than necessary - excessive high heat can ruin most skillets) I also got a griddle which is the Calphalon One Infused Anodized - their top railway. I love it as well, and would purchase either again. I went mostly with the Contemporary line due to lower price. Be sure to read the packaging to see what coordinate b arrange for you are getting, as they have several lines out there. There is the 'infused anodized' and the 'hard anodized', nonstick and without the nonstick, etc. Check out their website for more message. [...] Pronounced pans! These pans have superb heavy bottoms. I don't have too many gripes, except it would have been nice if the handles were welded to the outside instead of being bolted in. Accessories will stick to the bolts. I just cook neater and avoid the bolts, and I'm fine. We use these pans for truly EVERYTHING that can be cooked on a stovetop! SHIPPING was SUPER FAST!!! *** UPDATE *** September 10, 2008 Bonzer product UNTIL we had guests who "helped us" clean up and put them in our super heavy duty dishwasher... After that, the consummate was never the same. I have ALWAYS hand washed my non stick pans. I'm afraid the trip through the dishwasher killed them. Now, our dishwasher is remorseless, much more harsh than the average dishwasher, i have to admit. We still use them, I'm a fan of the heavy bottoms and even distribution of heat. But now, I have to use provisions spray to keep food particles from sticking :( Favorite pans These are the pans that get Euphemistic pre-owned in my house almost every day. They are heavy which distributes the heat evenly, but make the big one difficult to carry when it's full. The nonstick surfaces are excel than most, but don't last forever. It's unbiased the right size and shape to make a generous portion of pasta sauce for two, including sauteeing the flesh. Calphalon's Contemporary line is the best looking of all their pots. The handle is a bit long, but feels great in your turn over, smooth, and stays cool. I like the glass lids to be able to see in the pots, though I tease a bit about dropping one. They have a ribbon of stainless around the edge, which might prevent breakage though. If you don't have the cash to buy a full set of these, start with this pot, it's a transaction. Sounds silly, but I love oatmeal and hate maintenance the pan afterwards. This cleans up easily and cooks evenly. I have used it for cooking rice, gravies and other foods that seem to pole and it always cleans up well. Now, for the lid. There is a black band on the inside of the lid and it scrubed off one night recently. I sat down, wrote an email to the companions and by the next day, they have a new lid on the way. They asked only where to send it, nothing else. I like companies that stand by the product they sell. So, if you are going to buy from this stock, check that black band, it should be between the glass and the metal, not on the inside of the lid. If you have a problem with the product, ALWAYS give notice of the manufacturer, they will almost always make it right, like Calphalon did for me. Extreme Cooking Gear My the missis and I first purchased Calphalon Contemporary Nostick cooking gear about a year ago. We both love them. Not only do they cook evenly and post-haste, but they are easy to handle & store. Additionally, clean up is easier then anything we have previously owned. We purchased some additinal items through Amazon, and received them in less than 5 working era. We are thoroughly impressed with both Calphalon and Amazon.
